But here, the adventure begins, as the distillery uses two yeast varieties from the red wine world (Pepe Nero and Toro Nero) to intensify the chocolaty malt notes while also bringing fruity accents into play.

The result allows you to experience a dance of robust cocoa, roasted hazelnuts, and spiced coffee in the aroma, accompanied by a touch of honey and blackcurrants. On the palate, a rich mix of red compote, orange peels, and dried fruits unfolds, rounded off by the elegant spice of green pepper, dark chocolate, and a hint of espresso. The finish lingers long, pampering you with raisins, sweet coffee, fine pastries, and a pleasant oak spice charmingly complemented by a pinch of tobacco.

This single malt is aged in Spanish Oloroso sherry casks, which wonderfully highlight the nutty style of the distillate and give it additional depth. Holyrood relies on the natural color from barrel aging and consciously avoids chill filtration – thus preserving the full spectrum of the whisky's aromas unadulterated. With its strong alcohol content of 49.4% ABV, the Scotch presents itself expressively and multilayered, without losing elegance.
