The Highland Park 12 years is the flagship of the northernmost whisky distillery in the world. Described by the now-deceased whisky expert Michael Jackson as one of the best all-rounders, many a whisky enthusiast owes their entry into the whisky scene to Highland Park 12 years. Thanks to its delicate background smoke, Highland Park 12 years bridges the gap between fans of unpeated whisky and friends of peated whisky. It's also a great evening whisky for experienced whisky lovers! Highland Park was founded in 1825 by a certain Robert Borwick in Kirkwall on Mainland, the largest of the Orkney Islands, and is now part of the Edrington Group, which also owns the famous Macallan distillery. By the way, there has been an illegal distillery at the same location since at least 1798, from which the Highland Park distillery emerged through legalization.
The Five Pillars of Highland Park Quality
A truly rare sight at Highland Park is the fact that they still (at least partially) malt their barley themselves, making it one of the few whisky distilleries in Scotland that still has its own floor maltings! The barley is dried over peat fires, which gives every Highland Park whisky a slightly peaty flavor. The peat comes from the nearby Hobbister Moor and is characterized by heather notes that can also be found in the whisky. The required water comes from the underground Cattie Maggie spring, which provides very hard water, also noticeable in the character of the whisky. Due to the cold island climate, the whisky matures slowly in former sherry casks into what we love and appreciate: a lightly smoky and pleasantly complex single malt for its age. The whisky is bottled at an alcohol content of 40% in elegantly shaped, flat bottles. Since 2017, the whisky has been released in a decorated gift bottle with the addition 'Viking Honour'. However, you still receive the usual Highland Park 12 quality. In the same year, Highland Park 12 years was awarded Gold at the World Spirits Competition in San Francisco.
