Starward - The name says it all. With this whisky, the distillery from Melbourne reaches for the stars. They couldn't have chosen a better name for their single malt Nova. The ambiguity of the Latin word 'new' and the term 'nova', a brightness explosion of a star, perfectly captures what this whisky is all about. It is an exciting single malt whisky that stands on solid foundations of traditional single malt whisky production, as practiced for centuries in Scotland and Ireland. At the same time, the Starward distillery consciously breaks with many whisky clichés in the culinary mecca of Melbourne. The proximity to the cocktail scene and food pairing is a fixed component in the presentation of this new unique whisky exotic.
The Nova single malt whisky is made from Australian barley malt from the Melbourne region and is double distilled in copper pot stills. For aging, Australian wine barrels that previously contained Shiraz, Pinot Noir, and Cabernet are used. Due to the highly variable climate of the region, the barrels mature significantly faster than their counterparts in Scotland or Ireland. Thus, the Nova shows a fruity complexity and fine oak spice even at a young age. On the palate, the Nova ignites like an explosion of red fruits and spices like nutmeg and pepper, yet remains pleasantly drinkable.
